Five ways to add flavor, not calories


Are you trying to watch your diet and getting bored with the usual broiled chicken breast? There are ways to spice it up without adding that sauce or melted cheese. You can use these combinations as rubs on chicken, fish, shrimp, or pork loin. Just grill until done.

Garlic and parsley.

Smash a garlic clove with the flat side of a knife. Add a little salt and just a few drops of olive oil. Chop and smash until it’s a paste. Add finely chopped parsley and you’re done.

Lemon and thyme.

Grate up to half a teaspoon zest from a lemon. Combine this with the juice of a fresh squeezed lemon and a pinch of fresh thyme leaves. Add cracked pepper.

Hoisin and ginger.

Purchase hoisin sauce from the specialty aisle at the grocery store. Thin two teaspoons with a little orange juice. Stir in half a teaspoon grated fresh ginger. This one is great on scallops and shrimp.

Orange and fennel.

Crush some fennel seeds with the flat side of a knife. Be sure to cover with your hand in case the pop out. Stir into one tablespoon frozen orange juice concentrate. Add a little salt. You can substitute peppercorns for the fennel – or get adventurous and try any of the exotic seasoning seeds.

Pineapple juice and soy sauce.

Combine one tablespoon frozen pineapple juice concentrate, one teaspoon soy sauce and a sprinkle of ground ginger. This glaze is really good on salmon.

Any of these can be prepared ahead of time and saved in the refrigerator for up to one week.
